A great treat for SpringApril, 2008 "How To" of the MonthLemon Coconut Cookie Mix in a Jar Lemon Coconut Cookie Mix 2-1/2 cups all-purpose flour 1-1/2 tsp. cream of tartar 1 tsp. baking soda 1/4 tsp. salt 1/2 - 1 tsp. grated lemon peel 1-1/2 cup granulated sugar 3/4 cup flaked coconut Layer ingredients in the order given into a wide mouth quart jar. Attach recipe. Lemon Coconut Cookies 1 jar lemon coconut cookie mix 1 cup (2 sticks) butter or margarine, softened 2 eggs 1 TBSP lemon juice Preheat oven to 400. In a large mixer bowl, combine the contents of the jar with the butter, eggs and lemon juice. Beat at low speed, scraping the bowl often, for 2 to 4 minutes, until well mixed. Drop rounded teaspoonfuls of dough, 2" apart, onto un-greased (or parchment paper lined) cookie sheets. Bake for 7 to 10 minutes, or until the edges are slightly browned. Remove from pans immediately.  |
